久保田で有名な朝日酒造は集落の神社の宝水でお酒を造ったのが始まり。もちろんいまでも使っているそうです。
里山を保全する取り組みをしたり、耕作放棄地で酒米を生産したりと、いろいろな地域貢献をされているそうです。僕もそんな事業者であり続けたいです。
水は宝物。こんな旨い酒もできるし!日本ほど水に恵まれている国はない。
膨大な海水が雨になって降って、森で保水して地面にしみ込んで、湧き水になって濾過されて。それがお酒に。
やっぱり森や山が大好き!

This sake is delicious!!!!!!!
Asahi Shuzo, famous for Kubota, began by making sake with spring water from the village shrine. I hear they still use it today.
They also contribute to the community in many ways, such as conserving satoyama woodlands and growing sake rice on abandoned farmland. I hope to keep running a business that gives back to its community like that.
Water is a treasure. It can make sake this delicious! There are few countries as blessed with water as Japan.
Vast amounts of seawater fall as rain, are held by the forest, seep into the ground, and emerge as filtered spring water. That becomes sake.
I really do love forests and mountains!
